So, let’s look at these simple, real food ingredients:
Homemade Pumpkin Bread Recipe
Make this easy banana bread recipe using Einkorn flour or any wheat flour.
Ingredients:
- 3 ripe bananas
- 3/4 cup brown sugar or coconut sugar
- 1 egg
- Whole wheat flour*
- Unbleached white flour*
- Plain yogurt (or sour cream)
- Baking powder
- Salt (I prefer Himalayan pink salt)
- Poppy seeds
- Raisins
- Walnuts (if you like)
Tip: You can freeze overripe bananas until you’re ready to bake. It’s okay if they turn black; that’s normal. When you need them, simply thaw the frozen bananas slightly, peel and mash as per recipe instructions.
*I have switched to Einkorn Flour for my baking recipe. Einkorn flour is made from the oldest known original, non-hybridized wheat. It has less gluten than most hybridized wheat and may work for those individuals who are on gluten-reduced diets. This simple banana bread recipe works great with Einkorn flour.
Super Easy Recipe as Follows:
This easy banana bread recipe makes one loaf but double the recipe and then put a loaf in the freezer. Frozen banana bread is super easy to thaw but for an extra quick tip, slice your banana bread prior to freezing. Take out one or more slices for a quick homemade treat. Thaw or toast and add butter and jam for a company-worthy afternoon snack!
You Will Need the Following Ingredients:
- 1/2 cup softened butter
- 3/4 cup brown sugar or coconut sugar
- 1 egg
- 1 cup whole wheat Einkorn flour or any wheat flour
- 1/2 cup unbleached white flour
- 1/4 teaspoon Pink Himalayan Salt
- 1 teaspoon baking soda
- 2 teaspoons poppy seeds
- 1 cup raisins (optional)
- 1/2 cup chopped walnuts (optional)
- 3 ripe bananas mashed
- 1/4 cup buttermilk, plain yogurt or sour cream

Combine All Ingredients:
- Beat the butter and sugar until it’s light and fluffy.
- Add the egg and mix well.
- Sift together whole wheat flour, white flour, baking soda, and salt.
- Mix the mashed bananas with buttermilk or yogurt, then set it aside.
- Add the flour mixture and banana mixture alternately.
- Stir in raisins, nuts, and poppy seeds.
- Mix until just combined.
- Pour the batter into a greased loaf pan.
Baking Instructions
- Bake at 350° for 50 to 60 minutes or until done.
- Insert a toothpick or knife to make sure the loaf is done (the toothpick or knife will come out clean when the banana bread is done).
- Remove the loaf pan from the oven.
- While still in the pan, turn it on its side and cool for 5 minutes.
- Turn the pan onto the other side and cool 5 more minutes.
- Run a knife around the edge of the pan to loosen the loaf.
- Remove from pan and continue to cool.
Once cooled, slice and enjoy! Consider adding some Homemade Creamy Butter Spread on your warm slice of banana bread!
How to Freeze for Later:
Loaves of banana nut bread are easy to freeze so consider doubling or tripling the batch.
Once the loaves are cooled, gently wrap or slice and wrap in parchment paper or waxed paper and pop into Ziploc bags. This will keep your loaves fresh.
The individual slices will thaw in about 15 minutes. The loaves will take an hour or two to thaw.
But, it sure is nice having these wholesome quick bread loaves on hand in the freezer!
