Plus, they are vegan and can be stored for a long time.
Take a Look at the nutrients in Hemp Seeds and Chia Seeds:
Recipe for Homemade Energy Bars
Ingredients
- Oats ~ one cup
- Hemp Hearts ~ one cup
- Chia Seeds ~ one cup
- Walnuts* ~ one cup
- Dates ~ one cup
- Pumpkin Seeds (Pepitas) ~ one cup
- ½ cup of Raisins or Craisins or dried apricots
- 1 tablespoon of Cinnamon
- 1 tablespoon of Nutmeg
*You may substitute Almonds, Pecans or Peanuts
Method
- Combine oats, walnuts, and pumpkin seeds in a food processor and grind it well until it is ground with some small chunks still left. I have this mini food processor that works just great!
- Next, add hemp hearts, chia seeds, cinnamon, and nutmeg and grind until it mixes up with the rest of the ingredients.
- Next, put raisins and dates and start the processor. While it grinds, you will see the dough taking on a round shape with a thick and sticky consistency. In case it does not form a sticky texture, add a teaspoon of water to hold the mixture together to get the desired consistency.
- Smoothly apply a layer of wax paper inside a square mold or baking tray while covering it completely. Place the dough into the mold or tray and spread it evenly across the tray.
- Place the tray into the freezer. Let the dough dry for a few hours. Once it has set completely, carefully take it out of the tray and cut it into the form of bars or small 1 inch square or balls like candy! ♥
- Consider individually wrapping the small squares or balls in Natural Parchment Paper for ease of storing and eating.
You can keep the bars or bites in an airtight container or a Zip Lock bag and place them into the fridge for 2 weeks at maximum.
For a chewy texture and to keep them fresh for a couple of months, store them in the freezer.
If left at room temperature, their texture will get softer and a bit crumbly plus the bars will lose their freshness over time.
