Ingredients you’ll need
To get started making this recipe, you’ll first want to gather all your ingredients. I use organic ingredients whenever I can.
Here is what you’ll need for 6 large muffins or 12 regular-sized muffins.
2 cups
Einkorn Flour or any wheat flour you have on hand
1/2 cup
granulated sugar
2 tablespoon
poppy seeds
1 teaspoon
baking powder
1 tablespoon
lemon extract or almond extract
1
large egg
½ cup
avocado oil or use the cooking oil you have on hand
1 cup
water
1/2 to 1 cup
fresh or dried blueberries
Optional
Light Lemon Glaze ♥
Storing:
Store in a Covered Container for a couple of days!
Substitutes:
Consider substituting raisins or craisins for the blueberries as well as omit the poppy seeds, if desired.

Step by Step Instructions
1: Preheat Oven: Preheat your oven to 400°F (175°C).
2: Then, either line your muffin tin with paper liners or grease it.
3: Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, poppy seeds, baking powder, and salt.
4: Combine Wet Ingredients: In another bowl, beat the egg and then mix in avocado oil, water, water, and lemon or almond extract.
5: Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the dried, frozen or fresh blueberries. Do not overmix; it’s okay if there are some lumps.
6: Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full.
7: Bake: For the 6 large muffins, bake for 22-24 minutes or until a toothpick inserted into the center comes out clean. For the dozen regular-size muffins, bake approximately 18 to 20 minutes.
8: Cool and Serve: Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack. Dust with powdered sugar or frost with a light lemon glaze while still warm, if desired.
