- 1 tablespoon oil
- 1/2 cup chopped onion or green onions
- 2 cups cooked ground beef or turkey – browned
- 1 can black beans or pinto beans, drained and rinsed
- 1 cup frozen or canned corn
- 1 cup salsa or prepared enchilada sauce
- 1 can diced tomatoes, undrained
- 1/2 teaspoon chili powder
- 8 large flour tortillas
- 1/4 cup of hot water
- 1 to 2 cups shredded cheddar cheese
- Favorite Toppings such as: sour cream, taco sauce or Salsa Verde
Consider any of the following substitutions.
- Use 1 1/2 cups refried beans instead of black beans
- Substitute corn tortillas for the flour tortillas
- Taco Meat instead of the ground turkey or beef
- Traditional Italian Sausage instead of the ground turkey or beef
- Consider any type of ground meats, to include: elk, deer, antelope, buffalo or yak

Preparing the Filling for Easy Tortilla Lasagna
01 In a large skillet over medium-high heat, brown ground turkey or ground beef and onions until done. Use the cooking oil if necessary. Once the meat is browned, drain off any excess fat.
02 Combine the brown meat and onions with the diced tomatoes, cilantro, corn, and black beans. Add either the salsa or spaghetti sauce to the meat mixture.
03 Starting with a greased 9×13 baking dish (or, like a covered Pyrex baking dish), place about 1/2 cup of the meat mixture on the bottom of the baking dish.
04 Next, add a layer of flour tortillas and then top with 1/3 of the remaining meat and bean mixture.
05 Repeat with another layer of tortillas and then a layer of the meat and bean mixture, ending with the layer of meat and beans. Basically, just evenly divide the meat and bean mixture in between the tortilla layers.
06 Carefully pour 1/4 cup of hot water over the top of the casserole. This helps to soften the tortillas as well as helps steam all the layers. Lightly cover the casserole dish and bake for 25 to 30 minutes.
07 Then, uncover and continue to bake for an additional 5-10 minutes, until you have some browning on the edges.
08 Watch for the middle of the casserole to bubble and steam. Add 5 to 10 minutes of extra time if necessary.
09 Once the casserole is finished baking, then top with the 1 to 2 cups of shredded cheese.
10 Close the oven door and turn the oven off to let the casserole rest for 5 to 10 minutes while the cheese melts.
