This is super inexpensive and fast to make.

This is super easy. Just saute your chicken breast or pre-cooked chicken until fully cooked. Then sprinkle with sesame seeds, and one tablespoon of honey and Dijon mustard. Server with rice, quinoa or pasta and a veggie. This is pretty tasty but extremely easy!

This is super easy. If you have chicken broth, add 32 ounces to your kettle. If not, use water. Dice 2 stalks celery and 2 large carrots or used canned or frozen vegetables. Add one 5 ounce can of chicken using juice and all.

Season with any mixed herbs if you have any like parsley, poultry seasoning or Mrs Dash, add a little pepper and salt but taste-test first to see if you even need to add salt. Only add 1/4 teaspoon at a time so it does not get too salty.

Add frozen or canned peas and heat through. If you have any type of pasta. Cook that separtely and add just before serving.

Serve with crackers or bread.

Remember to think color and flavor! Color adds interest so make sure to be thoughtful in your meal planning……even simple meals are made special when they are more colorful!

If you have extra meat leftover from a roast, turning it into a simply delicious stroganoff is super simple! Saute the meat chunks or slices in oil or ghee. Include fresh onion and garlic but this is optional. Add 1/2 to 1 full cup of liquid, water or broth and simmer for 10 minutes.

Add canned or fresh mushrooms if you have them. Heat gently.

Bring this to a slight boil for just a few minutes. Remove from heat and stir in about 1/2 cup sour cream or plain yogurt. Return to heat but do not boil. Serve over rice, buckwheat, quinoa or other cooked grain.

And, of course……add parsley flakes as they always add color which makes your meal more appealing!

I am going to write a post on how to make scrambled eggs with an important gourmet cooking tip.

But, in a nutshell…….high heat causes crumbly and dry scrambled eggs. Liquid should not be released from your eggs. There should be no water or liquid leftover in your pan.

Scrambled eggs should be fluffy and they should hold together.

So, for now……simply reduce the temperature when cooking your scrambled eggs. It is all a matter of cooking science and protein structure of eggs which is fascinating! Coming Soon…….

34. Mashed Potatoes & Meat with Vegetables (and, Homemade Gravy!)

Serve mashed potatoes topped with a meat and vegetables in a gravy. We love mashed white sweet potatoes as they are healthier than regular potatoes (find out why sweet potatoes are healthier here.)

Peel and boil sweet potatoes until tender. Mash with just a tad of milk or water to consistency that you like.

Add cooked diced meat and frozen vegetables. Canned vegetables work well, too. Serve the meat and veggie mixture over the potatoes.
