Pie Crust Cinnamon Pinwheels | A Rich Pastry Cookie
These mini cinnamon pinwheels, with only a few ingredients, are easy to make and deliciously tasty! They are perfect during the holidays to add interest to the homemade cookie tray.

You can make your own homemade cinnamon pinwheel cookies with leftover pie crust trimmings. Or, if you need a couple dozen, then simply start with a full pie crust recipe and make a full batch of cookies.
Homemade Pie Crust Cinnamon Pinwheels
When I was young, my mother taught me to make these little cinnamon pinwheels with piecrust trimmings of pie dough after making pies.
These rich cookies are so easy to make but look like they take a lot of work.
Simple Ingredients
This is really easiest cinnamon pinwheel cookies recipe. All you need is one single pie crust pastry, 2 tablespoons soft butter and 4 tablespoons cinnamon sugar.

Instructions
- First of all, make your pie crust recipe for a one single pie. Do not over handle the pastry. Divide the pastry dough into 2 part.
Roll one the parts out a flour boards with a rolling pin. Shape the pastry into an 8x12inch rectangle. If you are not sure how to roll out a pastry or pie crust then this will help.
If your shape is not quite a rectangle, simple cut off some of the edges and reshape your pastry to be the approximate size.
2. Next, spread the pastry with 2 tablespoon of soft butter leaving a 1/2″ edge all around. This helps when sealing the pastry edges.
3. Sprinkle 3 to 4 tablespoons of cinnamon sugar mixture on the butter. This would be approximately 3 to 4 tablespoons of granulated sugar and 1 to 2 teaspoons of cinnamon.

4. Starting from the long edge, carefully roll the pastry into a cylinder. Seal edge by slightly pinching.
5. Place your pastry in the freezer for 15 minutes or so to chill. This will make slicing the individual cinnamon biscuits so much easier.

6. Once chilled, preheat your oven to 400 degrees.
7. Carefully slice your small cookies or biscuits into 1/2″ slices.
8. Place slices on a baking sheet or cast iron pans. Press each one slightly to seal edges
9. Bake for 8 to 10 minutes. This is a hot oven so watch your time carefully. Your pinwheels should be a light golden brown but not be dark.
10. Remove from oven and cool.
11. Store any leftovers by wrapping up. They will remain fresh for 2 to 3 days. Freeze for longer storage.
