Einkorn Flour Chocolate Chip Cookies
So, let’s take cookies: think about Homemade and Healthy! I have adjusted and altered my standard recipe to reflect my desire to have delicious and nutritious cookies…ones that taste incredibly great but are also pretty healthy.
It is important to only slightly adjust the sugars and flours in your original recipe so your cookies still bake nicely. Plus, substituting a little bit of an alternative sweeteners can made an additional difference.
I try to use organic ingredients whenever possible….along with using a variety of wholesome oils and shortenings.
While I am not a strict purist, I do try to work with natural whole food ingredients that I feel have good nutritional value……therefore helping keep my family on the path to health!

Wholesome Healthy Chocolate Chip Cookies
INGREDIENTS:
- 1/2 cup Peanut Butter
- 1/2 cup Avocado Oil
- 1/2 cup Coconut Sugar
- 1/4 cup sugar
- 1 to 2 teaspoons of water if the dough seems a bit dry
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup Old Fashioned Rolled Oats
- 1 cup Einkorn All Purpose Flour or any wheat flour
- 1/4 cup Einkorn Whole Wheat Flour or any wheat flour
- 1/2 cup chocolate chips
- 1/2 cup nuts (I use peanuts!)
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
⇒Preheat your oven to 350 degrees.
INSTRUCTIONS:
- Combine Peanut Butter with Avocado Oil, coconut sugar, and cane sugar.
- Add the vanilla extract and egg. Once this is thoroughly combined, add the rolled oats, flours and baking soda and 1/4 teaspoon of salt.
- Add the chocolate chips and nuts. Combine well.
- Roll balls about 1 inch in size. Either place the balls on the cookie sheet and bake or if the dough seems a little dry, press each ball down with crisscrosses. DO a test cookie to make sure they bake the way you like.
- Bake for 6 to 7 minutes at 350 degrees
- Cool on a rack until chocolate chips are

Quick Note: Please Do a Test Cookie!!! Place one or two test cookies on your baking sheet. Bake for 7 minutes and see how it looks.
The humidity in your kitchen plays a huge roll in how much flour and liquids you need in each recipe. I almost always have to readjust the flour so do not skip this step.
Once your test cookies come out the way you like, then start baking the rest of the cookies!!!
This recipe makes about 3 to 4 dozen wholesome cookies. As a result of these cookies being so easy to make and so easy to eat, consequently, I bake them quite often; feel free to double the batch for more cookies…….Enjoy!!
