EASY MEATLOAF RECIPE | The Best Recipe Ever
This easy meatloaf recipe has been our family’s standard “go-to” for decades. Not only is it delicious, but we have changed how it is shaped, which makes it stand out as GREAT……
I could go on and on about how wonderfully delicious it is and how easy it is to make, but really this is a solid, traditional meatloaf recipe that will become your “old standby” forever.
Easy Meatloaf Recipe: Serves 8+
I have made this easy meatloaf recipe with beef hamburger, elk, deer, and antelope burger. This is a very versatile recipe that works equally as well with a beef or wild game burger.
TO BEGIN:
FOR THE MEAT LOAF:
- – 2 pounds of ground meat (beef, pork, or wild game)
- – 2 eggs
- – 1 cup rolled or quick oats
- – 2 teaspoons Poultry Seasoning
- 1 tablespoon Dried Parsley Flakes (for color!)
- – 1/2 teaspoon salt
- – 1/4 teaspoon pepper
- – 1 cup milk
- – Oil spray (avocado, coconut, or olive) for the pan
- – Optional: 1/4 cup diced onion
Note: I always use Rolled Oats, the old fashioned type as they improve the texture of the meatloaf. (so this is really the perfect easy meatloaf recipe without bread crumbs.)
FOR THE TOPPING:
- 1/2 cup Ketchup (store bought or homemade Ketchup)
- 2 teaspoons Yellow, Brown or Dijon Mustard
- 2 Tablespoons Brown Sugar or Coconut Sugar
You will need a large mixing bowl and a big baking dish, cast iron skillet or a 9 x 13 inch pan. Glass, pottery, and cast iron all work well.
In the mixing bowl, mix the ground meat, oatmeal, poultry seasoning, salt, pepper, eggs, and milk until everything is combined.
Spray the baking dish or skillet with avocado oil, coconut oil, or olive oil.
GETTING READY TO BAKE:
Divide the meatloaf mixture into 8 to 12 portions. With damp hands, shape each portion into small meatloaf bundles. When my kids were young, we called these Meatloaf Travel Bundles because they were easy to make, bake, serve, and pack for lunches.
These “Travel Bundles” are great for making smaller portions for kids so they can have their own personal meatloaf!

Place each individual meatloaf in your oiled baking dish so they are not touching each other. (These individual bundles bake much faster when separated—this was always the name of the game in our house: ~fast and easy!!).
Now, mix the topping ingredients in a small bowl and carefully spread or “frost” approximately 1 tablespoon on the top of each meatloaf bundle. Try keeping it on the top and not letting it drip down the sides.
Bake at 350 degrees for approximately 35 to 40 minutes or until done.
These individual meatloaf bundles bake so much faster than the traditional meatloaf that is baked in bread pans, plus they are so easy to serve…no cutting slices only to have them crumble while removing them from the loaf pans!
