Oven Roasted Garden Potatoes with Sausage
Recipe for Oven-Roasted Potatoes and Sausage Dinner
This meal is simple to make and roast. It tastes great and is easy to prepare. Plus, it looks lovely on the table.
Oven Roasted Garden Potatoes with Sausage
I like to use new potatoes in a variety of colors, but any type of potatoes works equally as well in the recipe. You may also add carrots, parsley, peppers, kale, or spinach for extra color.

What You Need for this Casserole
- Use 1.5 to 2 pounds of small colorful garden potatoes, washed and sliced, or regular red potatoes.
- Slice six carrots into 1/2-inch pieces or cut them into small chunks (optional).
- Chop four leaves of washed kale (optional).
- Dice or chop one cup of onion to your preference.
- Add 1/4 cup of avocado oil or ghee.
- Season with 1/4 teaspoon of Himalayan Pink Salt or to taste.
- Add freshly ground pepper to taste. Avocado Oil ~or 1/4 cup of Ghee
- 1/4 tsp or to taste Himalayan Pink Salt or to taste.
- Add freshly ground pepper to taste.

Pre-heat oven to 400 degrees.
Prepare all potatoes and any additional vegetables by rinsing and then either slicing or cutting into chunks. Next, toss all ingredients (except the chopped kale, which is added during the last 15 minutes of roasting) together in a mixing bowl to thoroughly coat vegetables with the coconut oil or ghee.
Grind a sprinkling of black pepper Frontier Pepper Blend and Himalayan Pink Salt over the mixture and spoon the mixture into a 9×13 baking pan or dish.
Bake for 30 minutes at 400 degrees. Stir the potato mixture with a spatula to make sure even roasting. Set timer for 15 more minutes.
While potatoes are roasting, pre-heat the sausage links or brats in a skillet on the stove top. Cook for 15 to 25 minutes on medium heat. Watch they do not burn.
At this point, check potatoes for tenderness by poking with at fork. Add the sausage links or brats on top of the roasted potatoes. Reduce the heat to 350 degrees and set timer for 15 more minutes.
If including chopped kale, add this at the end during the last 15 minutes of roasting time. Stir again and recheck for tenderness.

For picnics and potluck dinners, roast the vegetables in your oven first, then move them to your Family Size Crock Pot to keep warm.

Delicious Hearty Potato and Sauaage Medley Main Dish
Ingredients
- 1 1/2 to 2 pounds of freshly scrubbed and sliced small potatoes. Or, us regular Red potatoes.
- 6 Carrots ~ sliced in 1/2 inch slices or cut in small chunks (optional)

- 4 Link Type Sausages or Brats
