Homemade Shortbread Cookies with Einkorn Flour & Coconut Sugar
Homemade shortbread cookies made with einkorn flour melt in your mouth. They are great for tea, coffee, or a lunchbox treat!
My family loves the yummy taste of these cookies. They are perfect for any occasion!

Homemade Shortbread Cookies
These cookies will make everyone smile, and they are easy to make! WHOLESOME SHORTBREAD is both simple and elegant.
I enjoy mixing healthy ingredients, especially organic ones, in this homemade shortbread cookie recipe!

1 1/2 cups Einkorn Flour (or any unbleached flour)
1/2 cup unsalted butter
1/8 teaspoon salt (I use Pink Himalayan Salt)
1 teaspoon Vanilla
1/2 cup Organic Coconut Sugar
1 Farm Fresh Egg * (I use the whole egg, not just the yolk)
A bit of Organic Powdered Sugar
Combine flour, butter, salt, and coconut sugar in a mixing bowl.
Cut the butter into the flour with 2 knives or a Pasty Cutter until the butter is the size of peas.
Add the egg and vanilla. Here is an Egg Separator if you need one.
Mix thoroughly. I mix with a spoon and then knead a bit with my hands to make a smooth ball of dough.
It will take a few minutes to work the butter completely into the flour, especially if your kitchen is on the cool side.
Roll the dough out to 1/4 inch on a floured board. I use Organic Powdered Sugar to dust my Bread Board / Cutting Board prior to rolling out the dough with a Rolling Pin.
Test a few cookies to see if you need to add 1 to 2 tablespoons of extra flour.
Baking with coconut sugar is different from using granulated or powdered sugar. If there isn’t enough flour, the cookies will spread too much and become lacy.
Add more flour until the cookies have the right consistency. Then, bake the whole batch.
Take a Pizza Cutter and cut the dough into cookie size little rectangles. Transfer the cookies to your baking sheet. Pick each cookie with a fork.
Bake at 350 degrees for 5 minutes and check to see if they are browning on the bottoms. If they are brown, remove and transfer to a Wire Cooling Rack.
If they are not browned on the bottoms, reset the timer for a minute more.
Watch closely as the butter can burn quickly. Remove after the additional two minutes. Transfer to the cooling rack.
