This Easy Einkorn Flour Pancakes Recipe can be doubled or tripled. These pancakes are light, fluffy, and a snap to make… Move over, store-bought pancake mixes! This recipe is easily doubled or tripled, too!
I use organic ingredients whenever I can to make my food healthier. I use organic Einkorn flour, fresh organic eggs, organic milk, organic plain yogurt, and avocado oil. I also found a great deal on avocado oil spray!!!!

QUICK NOTES:
Vegan Einkorn Pancakes: Use 1 tablespoon of ground flax seeds mixed with 3 tablespoons of water. Replace dairy milk with rice milk or nut milk, and use coconut yogurt instead of dairy yogurt.
Dairy-Free Einkorn Pancakes: Replace dairy milk with rice milk or nut milk, and use coconut yogurt instead of dairy yogurt.
Egg-Free Einkorn Pancakes: Use 1 tablespoon of ground flax seeds mixed with 3 tablespoons of water.

Homemade Einkorn Flour Pancakes with a Sourdough Taste
Einkorn Flour Griddle Cakes taste like Sourdough Pancakes but without the extra work!!! Plain Organic Yogurt is the secret ingredient!!!
This recipe can easily be doubled or tripled as needed………and is perfect for both PANCAKES and WAFFLES!!!
Ingredients
- 1 Cup Einkorn Flour
- 1 Fresh Farm Egg
- 1 Cup Organic Milk
- 1 Tablespoon Baking Powder
- 1/4 teaspoon Mineral Salt
- 1 Tablespoon Plain, Organic Yogurt
- 1 Tablespoon Avocado Oil
Instructions
- Combine all the ingredients together in a mixing bowl, with a wire whip or hand mixer until well combined.
- Lightly oil your medium hot griddle or pan.
- Ladle 1/2 cup of the batter on to the griddle.
- Bake until bubbles appear.
- Carefully flip pancake or griddle cake and bake the other side.
- Serve Warm with Butter, Jam, Maple Syrup or Honey!!

I must made these and my husband really liked them! I’ve been making low carb, GF pancakes with coconut flour or better with almond flour. These were really good and I will make them again.

I only have einkorn berries that I grind into flour. Do you think I need to alter the recipe at all?
You should be fine using the recipe as is. Your freshly ground wheat is a whole grain flour but since you are used to baking with whole grain flour, you should be okay. Maybe just let batter rest a little longer to absorb the liquid. Let me know how it goes!!!
Been making these for years and still love them. I do find that I need between 2tbsp – 1/4cup more flour than listed in the recipe. I use unifine (azure standard) einkorn flour. Even Jovail brand needs more though. I also add 1/2 tsp vanilla extract.
