Einkorn wheat is definitely something to investigate, as has been noted; it has potential as the “new” wheat, especially for those with gluten sensitivities. This wheat has been protected from hybridization and thus has remained in its original state for over 10,000 years!
With the addition of yogurt, these taste like sourdough Einkorn waffles. So, you have the delicious sourdough taste without all the work! This is a nice quick fix!
Quick note: if you do not have a waffle iron, this recipe works just a well for Einkorn flour pancakes!
Vegan Einkorn Waffle Recipe: Use 1 tablespoon of ground flax seeds mixed with 3 tablespoons of water. Replace dairy milk with rice milk or nut milk, and use coconut yogurt instead of dairy yogurt.

Hi… I have never left the batter in the fridge overnight before, but it will probably work out just fine! Did a little reading, and the consistency of the batter may change a bit as well as the leavening results, but both of those are easy to live with! Let me know how it goes! Thanks. ☺
